Few years back I did a backing class and I spend whole year over there, but honestly speaking I did not learn anything new there, and I thought the things I already know is the all baking is all about, but then I went for hotel management three years degree and OMG, they had a whole new world of baking there and I thought it is too hard to learn everything.
But they are too good not only in what they do but in teaching too, in that UNI. I met a Spanish teacher and he was there to teach us human resources, but he was too good in cooking too and he gave this recipe to use and I have been doing that for ages and I still get the same taste.
No-Bake Cheesecake Recipe
Here is a list of ingredient you just need to cook no-baking cheesecake recipe:
- 24 vanilla wafers
- 2 tablespoon butter, you can use margarine too and you need to take melted one
- 1 pack of unflavored gelatin
- 1 large lemon
- 3 tablespoon natural water
- 1/4 cup water
- 2 package cream cheese at room temperature
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 1 1/2 cup buttermilk and some Raspberries, strawberries for garnish
Now we are going to start making of cheesecake now:
Now you need to coat 9-inch spring form pan with cooking spray and then spread the line on the bottom with paper and then spray the paper too, now you need to place knife blade in the food processor and add wafers in it and make fine crumbs form of it and then add a bit butter in it and mix it well and then prepared the bottom with even layer and put it in the refrigerate.
Now we are going to create cheese filling and we will take small bowl and sprinkle gelatin over 3 tablespoons water and let it get dissolve for 5 minutes and while it is getting ready, we will take grate 2 teaspoons peel and squeeze 1 tablespoon juice and then add 1 1/2-quart saucepan and juice in it and put it on the fire till it get boiling and then remove it from heat and Immediately add gelatin in it and start mixing and stir until dissolved then let it cool down.
Now in a large bowl you need to mix cream cheese and sugar for 5 minutes on a very light speed and keep blending it till it become fluffy and smooth now beat in lemon peel and vanilla and reduce the speed to even more low, now add buttermilk, and then gelatin mixture in it too, keep beating it for more 2 minutes and now you need to take the pan out of the refrigerator.
Pour the cheesy mixture onto prepared crust and put it back in refrigerate, never ever cover your chess cake and put it there for 4 to 6 hours serve chilled and decorate it with fruits and some honey too.
