Cheesecakes can be broadly categorized into two basic types, baked and unbaked. Each comes in a variety of styles determined by region and we did share none baked cake earlier and now I am going to share the cheesecake recipe of baked Cheesecake and this is the most wonderful cheesecake.
I have ever had and trust me I had a lot, I have eaten the Cheesecake from the famous bakeries and I have tried it everywhere, but the one I am sharing with you is the best ever cheesecake recipe.
Perfect Cheesecake Recipe
For Crust you need 2 cups of Graham cracker crumbs, 2 Tbsp sugar, a pinch of salt and 70 g unsalted butter, keep it in room temperature.
And for filing you need 2 pounds cream cheese keep it on room temperature, 1 1/3 cup granulated sugar , a pinch of salt, vanilla, 4 eggs, 2/3 cup sour cream and 2/3 cup heavy whipping cream.
For Toppings you need 2 cups sour cream, 1/3 cup powdered sugar , 1 teaspoon vanilla, fresh raspberries, 1/2 cup granulated sugar and half cup water.
We are going to use 9-inch, 2 3/4-inch high springform pan with heavy-duty, 18-inch wide aluminum foil and a big roasting pan.
We will prepare the crust first and for that we will prepare the spring form pan, place a large 18-inch by 18-inch square of aluminum foil on a flat surface and then set the spring form pan on it and make sure no water gets inside to disturb the crust and then preheat the oven to 350°F, with rack in lower third of oven, now you need to make crust and out the graham crackers in a food processor and ten put it in a large bowl, and stir in the sugar and salt and you need to use your own hands to mix the melted butter in it and then keep the 1/4 cup of the graham cracker crumbs aside and put the rest in the bottom of the spring form pan and then gently press down it with your hands and fingers and then put it in the over for 10 minutes and then take it out reduce the oven temperature to 325°F now.
Now you will start making the filing and for that you need to cut the cream cheese into chunks and place in the bowl of an electric mixer and attache paddle and mix on medium speed for 4 minutes until smooth and then add sugar and mix for 4 minutes, now add salt and vanilla and then eggs and mix for a minute, now add the sour cream and then heavy cream and then mix with spatula.
Now you need to place the foil-wrapped spring form pan in a large, high-sided roasting pan, filled with 2 quarts of boiling water and then pour the cream cheese filling into the spring form pan and then smooth the top with a rubber spatula now you need to take the roasting pan with the spring form pan and place it in the oven on the lower rack and with water in it and cook at 325°F for 1 1/2 hours and after that open the oven door, but not too much and let the cheesecake cool down in the oven for another hour and then put it in the refrigerator to cool down for another 3-4 hours .
And mean while prepare sour cream topping with mixing the entire ingredient and put it in the refrigerator with the cheesecake and serve them together, its really very delicious Cheesecake Recipe.
